White Tea

White tea is the least processed of China’s traditional teas. After picking, the leaves are withered in the sun and air-dried slowly over several days — no rolling, no fermentation, no pan-firing. The result is a tea that retains more of the leaf’s natural chemistry than any other style: light in body, low in bitterness, and capable of aging into something deeper and honeyed over five, ten, or even twenty years.

The traditional heartland is northern Fujian. Fuding and Zhenghe produce the most recognized styles — Silver Needle, plucked as single buds in early spring, and White Peony, one bud and two leaves picked shortly after. Further inland, the higher-altitude gardens of Shouning and the surrounding counties contribute smaller, slower-grown batches with a more concentrated flavor. Together these Fujian gardens account for the majority of authentic Chinese white tea.

Four grades define the drinking experience. Silver Needle is the most delicate: a pale, almost colorless infusion with a flavor of sweet pea and honeydew. White Peony adds body and a fuller floral, almost stone-fruit note. Gong Mei and Shou Mei, picked later in the year with more mature leaves, offer a richer, more honeyed cup that drinks well hot or after short aging. Beyond two or three years, white tea develops notes of dried longan, red date, and a faint medicinal warmth — a transformation that has made aged white tea a quiet collector’s category in its own right.

Buyers looking for everyday drinking usually choose current-year White Peony or Shou Mei; those after something more developed and complex often opt for 3-to-7-year-aged cakes from Shouning or Fuding.
