What cold brewing does

Cold brewing is the simplest way to drink Chinese tea. Instead of hot water, the leaves steep in cold or room-temperature water for six to twelve hours — usually overnight in the fridge or in a water bottle on the desk. The result is a smoother, sweeter, less bitter cup, with noticeably less caffeine than the same leaves brewed hot. Because cold water extracts more slowly and selectively, lighter teas like white and green come through with their floral and honey notes intact and none of the astringency that hot water can pull from the same leaves.

Shou Mei + White Peony — Two white teas from different parts of the plant and different harvest months. Shou Mei brings mature, woody, dried-longan depth; White Peony rounds it out with floral softness. A richer, more full-bodied white tea experience.
White + Red — A fuller-bodied option for drinkers who want cold brew with more presence. White tea contributes soft honey; red tea adds a thin layer of malt and a gentle astringency that holds up well over ice.
How to brew

Use 6–8g of leaves per 500ml of cold or room-temperature water. Place leaves in a bottle, jar, or cold-brew pitcher; refrigerate for 6–12 hours; strain and drink within 24 hours. The same leaves can be re-steeped once for a lighter second batch. Add ice if you want to drink it immediately.

Each pouch is sealed and sized for three to four cold-brew batches (roughly 25g total). Stored away from light, heat, and moisture, the leaves keep for at least 12 months.

FAQ

1.Do I need special equipment? No. Any clean bottle, jar, or pitcher with a lid works. A mesh strainer or filter bag makes removal easier.
2.Can I use room-temperature water instead of cold? Yes. Room-temperature water steeps a little faster (4–8 hours) and produces a slightly more aromatic cup.
3.Does cold brew have less caffeine than hot? Yes — typically 30–50% less, depending on the tea and steep time.
4.Can I drink it the same day I brew it? Best flavor comes from at least 6 hours of contact. If you’re short on time, a 2–3 hour room-temp steep followed by ice will give a usable cup, though less sweet.
5.Can I reuse the leaves? Yes — once, for a lighter second batch. After two cold brews, the leaves are spent.
